From 7-day food diaries of a cross-sectional sample of American elderly individuals (n = 561), breakfast consumption patterns were assessed and related to average daily nutrient intake patterns. Results indicated that, in general, breakfast consumption made a significant contribution to the average elderly individual's daily nutrient intake and, in particular, breakfasts containing ready-to-eat cereal had a greater impact on nutrient intake levels than did breakfasts not containing ready-to-eat cereal. More specifically, elderly individuals who had ready-to-eat cereal at breakfast 4-7 times during the week surveyed consumed significantly less (P less than or equal to 0.05) fat and cholesterol and significantly more fiber, carbohydrate, total sugar, protein, thiamin, niacin, riboflavin, vitamins B6, B12, and A, iron, calcium, phosphorus, potassium, magnesium, copper, and zinc at the breakfast meal than those who had no ready-to-eat cereal at breakfast. Fewer statistically significant differences between the two groups were evidenced when vitamin/mineral supplement usage was included in the analysis. Average daily intake levels of frequent consumers of ready-to-eat cereal were significantly (P less than or equal to 0.05) greater than those of nonconsumers for all dietary components except protein, fat, cholesterol, vitamin E, and sodium when supplement usage was excluded from the calculations. When supplements were included, significant differences between the two groups decreased to nine dietary components. Comparison of the average nutrient composition of breakfasts containing ready-to-eat cereal and those not containing ready-to-eat cereal revealed those including ready-to-eat cereal contained significantly greater quantities of all nutrients assessed regardless of whether or not vitamin/mineral supplements were included in the calculations.  相似文献

目的:了解中国中小学生早餐营养素摄入量。方法:早用1992年全国营养调查中的住户调查及连续3d24h回顾法膳食调查资料,对中国17719名中小学生早餐能量和营养素摄入量进行分析。结果:中国中小学生早餐蛋白质、钙、锌、硒、视黄醇当量、硫胺素、核黄素等营养素摄入量均未达到RDA的25%,其中钙、视黄醇当量和核黄素等摄入量严重不足,仅为RDA的10%左右,中小学生早餐来自蛋白质、脂肪和碳水化合物的能量比例不当。比较来看,小学生早餐蛋白质、脂肪、钙、铁、锌、硒、硫胺素、核黄素和烟酸等摄入量占RDA百分比明显高于中学生。男生早餐蛋白质、铁、锌、硒、视黄醇当量和烟酸等摄入量占RDA百分比稍高于女生。乡村学生早餐能量、蛋白质、碳水化合物、钙、铁、锌、视黄醇当量、硫胺素、烟酸及抗坏血酸等摄入量占RDA百分比高于城市学生,脂肪、硒和核黄素摄入量低于城市学生。结论:乡村中小学生早餐平均能量和营养素摄入量好于城市中小学生,但城乡中小学生早餐营养素摄入状况均有待改善。  相似文献

OBJECTIVE: To determine mean intake of energy and protein, total fat, saturated fat, percent energy from total and saturated fat, cholesterol, carbohydrate, calcium, iron, zinc, folate, vitamins A, C, E, B-6 and B-12, thiamin, niacin, riboflavin, magnesium, sodium and fiber of preschool Head Start children at school and away from school. DESIGN: Twenty-four-hour food intakes for 358 Head Start children were obtained by observing food intake at school and acquiring intake recalls from parents or guardians specifying food their children consumed for the balance of the day. After determining group estimates of energy and nutrient intake, mean intake was compared to standard nutrient recommendations for the entire 24-hour day, i.e., for the time the children were in school and for the remaining hours away from school ("home" intake). SUBJECTS: The 358 Head Start children attended school either half-day (2- to 3-hour AM and PM sessions) or all-day (5 to 6 hours). STATISTICAL ANALYSES: Differences in nutrient intake among class times were analyzed using one-way analysis of variance (ANOVA) followed by Tukey's multiple comparison test. Differences with a p-value <0.05 (two-tailed) were considered to be statistically significant. Total energy, protein, calcium, iron, zinc, vitamins A, C, E, B6, and B12, thiamin, niacin, riboflavin as well as folate and magnesium were compared to the Recommended Dietary Allowances for the 4- to 6-year-old age group. Other standards that were used for comparisons included the National Cholesterol Education Program (fat, saturated fat and cholesterol), the 1989 National Research Council's Diet and Health Report (carbohydrate and sodium) and the recommendation for fiber proposed by the American Health Foundation. RESULTS: At school, half-day children consumed up to 25% of the daily recommendation for energy and nutrients, while all-day children achieved at least a third of the recommended intakes. When intakes at home and school were combined, all three groups of children (AM, PM and all-day) exceeded dietary recommendations for protein, vitamins and minerals. Energy intake remained below 100% of the recommendation, while intake of total fat, saturated fat and cholesterol exceeded recommendations. APPLICATION: Further research is required to explore energy needs and determine nutritional status and nutrient needs of minority and low-income preschool children. Strategies are required to increase nutrient density, but not fat density, of meals and snacks served to children who attend day care for part of the day. Finally, school meals and nutrition education programs such as Team Nutrition should broaden their base to include healthful eating habits for all school children, including the very youngest children in preschool programs.  相似文献

Dietary intakes of 54 home-bound elderly recipients and nonrecipients of home-delivered meals were examined, utilizing the 24-hour recall. Nonrecipients had significantly greater intakes of carbohydrate, thiamin, and iron than recipients. More than 50% of all subjects consumed less than the RDA for vitamin A, riboflavin, calcium, phosphorus, and iron. Calcium intake was below the RDA for 82% of the subjects. Mean fat and saturated fat intake exceeded recommendations for both recipients and nonrecipients. Provision of nutrition services to homebound elderly appears to be lagging behind need.  相似文献

The validity of 24-hour dietary recalls was tested by comparing the recalled intake of adolescent girls to their actual intake during a metabolic study. Diet recalls were a valid bases of estimating the dietary intake of energy, protein, calcium, and zinc by this group of adolescents. However, the majority of the subjects were unable to recall their food intake with enough accuracy so that their intake of vitamins A and C, thiamin, riboflavin, niacin, and iron could be calculated within the range of two-thirds to four-thirds of their actual intake.  相似文献

A dietary assessment of food pantry and soup kitchen users was conducted. A demographic and socioeconomic profile of participants was developed. One hundred ninety-one persons completed 30- to 40-minute interviews while in line to receive food assistance. Dietary status was determined from 24-hour recall data. Intakes of calcium, iron, thiamin, riboflavin, niacin, protein, vitamin A, and vitamin C were compared with the 1980 RDAs for age and sex. A dietary adequacy score was developed to evaluate nutrient quality by calculation of a nutrient density ratio (total intake for a nutrient divided by the RDA). A value of one was considered the norm. A score of 0.67 or less was considered an inadequate nutrient intake. Sixty-eight percent of the sample demonstrated some degree of inadequate nutrient intake. Nutrients that tended to be the lowest were calcium (76% inadequate), vitamin C (74% inadequate), and thiamin (74% inadequate). Inadequate nutrient intake was significantly associated with a lack of cooking facilities, lower monthly incomes, and lesser amounts of money spent on food. Comparison of food pantry users with soup kitchen participants indicated calcium was a problem nutrient for both groups.  相似文献

目的分析某市中小学生膳食营养状况,为膳食营养指导提供科学依据。方法采用5 d称重法和发放膳食调查表的方法对某市寄宿和非寄宿生171人进行膳食调查。结果中、小学寄宿和非寄宿生钙、视黄醇和核黄素摄入量低于RNI标准,尤其是钙摄入量偏低,均低于RNI的50%以下。蛋白质、脂肪、碳水化合物的供能比,中学寄宿生脂肪产能比达30.8%,略高于推荐标准范围,而中学非寄宿生和小学生供能比均较适宜。中学寄宿与非寄宿生血清钙缺乏检出率分别为6.52%和21.95%,差异有统计学意义(P<0.05);肥胖检出率分别为3.39%和14.29%,差异有统计学意义(P<0.05)。小学寄宿与非寄宿生血清钙缺乏检出率分别为73.91%和78.95%。结论中小学生营养素的摄入不均衡,钙、视黄醇、核黄素缺乏,应调整膳食结构,增加动物性食物、乳及乳制品、有色蔬菜及含钙丰富食物的摄入量。  相似文献

1. The contribution of school milk to the nutrition of 396 Kent primary schoolchildren aged 8-11 years was assessed using information collected in a survey which included a weighed-diet record, a socio-economic questionnaire and a medical examination. 2. Over half the children (59% for boys, 54% for girls) drank school milk every school day of the diet-record week. 3. Children who drank school milk every school day, when compared with those not drinking it, had a significantly higher mean daily intake of liquid milk, a higher total daily intake of several important nutrients including animal protein, calcium, thiamin and riboflavin, and a diet richer in Ca and riboflavin (boys) and animal protein and Ca (girls). They were also less likely to have intakes of Ca and riboflavin below the recommended daily intakes for these nutrients, (Department of Health and Social Security, 1969). 4. The increased nutritional intake associated with school milk consumption was not related to any differences in height, weight, arm circumference or skinfold thickness. 5. Meal and snack patterns of 114 male and 111 female adolescents in a southern Appalachian state were examined from 24-hour food records kept on a school day. Breakfast was skipped by 34% of the respondents, and 27% either skipped lunch or ate a snack-type lunch. The evening meal and snacks, each of which contributed about one-third of the daily energy intake, were eaten by 94% and 89%, respectively. Girls' mean intakes of vitamin A, calcium, and iron were low at all eating occasions throughout the day. Boys' mean intakes of iron were low at breakfast, lunch, and snacks; their vitamin A intakes were low at lunch and snacks. Adolescents who prepared their own breakfasts consumed less energy, protein, fat, and niacin at that meal than did adolescents who ate breakfasts prepared by their mothers. However, adolescent-prepared breakfasts were higher in nutrient density for calcium, riboflavin, and thiamin. Evening meals prepared by adolescents were similar in total nutrient content to meals prepared by their mothers but lower in nutrient density for iron and thiamin. Evening meals prepared by adolescents were more likely to include a sandwich and less likely to include a vegetable than were meals prepared by mothers.  相似文献

Few studies have explored the relationship between sugar content in cereal and health outcome among children and adolescents. This study was designed to investigate the associations between ready-to-eat cereals, categorized by sugar content, with weight indicators and nutrient intake profiles. Data collected from 6- to 18-year-old US children and adolescents (N = 9660) in the National Health and Nutrition Examination Survey 2001-06 were used to analyze cereal consumption. Body mass index (BMI), BMI-for-age, waist-to-height ratio, percent overweight or obese, mean day-1 intake, and usual daily intake of macronutrients and micronutrients were the dependent variables; day-1 cereal intake, categorized by tertiles of sugar content, was the main independent variable. Weighted regression with adjustment for the survey design was used to model the dependent variables as a function of day-1 cereal intake, adjusting for age group, sex, race/ethnicity, total day-1 intake of energy, calcium and sugar, the Healthy Eating Index-2005 total score, and household income. For all tertiles of sugar classifications of cereal, children who consumed cereal had significantly lower BMI compared with children who consumed no cereal (P's < .05). Similarly, when compared with children who consumed no cereal, those who ate cereal consumed significantly less fat and cholesterol and significantly more carbohydrates, sugar, whole grains, vitamin A, thiamin, riboflavin, niacin, vitamin B6, folic acid, vitamin B12, vitamin C, calcium, magnesium, iron, and zinc. Lower weight and positive nutrient profiles were associated with cereal consumption regardless of sugar content.  相似文献

目的了解医科大学生的主要营养问题,以便采取有效干预措施。方法随机整群抽取420名医科大学生进行5 d膳食称重调查和体格检查,并从中随机抽取190人进行营养生化指标检查。结果调查人群每天各类食物摄取量偏低;能量、核黄素和钙摄入不足,硫胺素和维生素C摄取严重不足;蛋白质质量较好;视黄醇和铁的摄取量充足但食物来源较差;中餐能量不足而晚餐能量偏高。尿负荷试验和尿钙排出量测定,大学生体内硫胺素、核黄素、维生素C和钙水平较低,女生贫血率为11.1%。结论应采取相应措施,改善学生膳食结构,特别增加奶类和蔬菜水果摄入量;女生应注意血红素铁的补充。  相似文献

目的了解沿海地区城市居民膳食结构以及膳食营养状况。方法 2009年8月~12月在宁波市各区随机对1332名18岁及以上的宁波市城市居民进行了食物频数问卷和24小时膳食回顾现场调查。结果城市居民对谷类、畜禽肉类、蛋类、水产品的摄入情况较好。但奶类及奶制品、蔬菜、水果摄入量不足,而食用油摄入过量。其中,奶类及奶制品的摄入量只达到膳食指南和平衡膳食宝塔推荐量的1/3。蛋白质、视黄醇、铁、硒的摄入量已达到DRIs标准。而钙、硫胺素、核黄素和抗坏血酸的摄入量严重不足。结论目前宁波市城市居民膳食结构不够合理,建议大力开展营养宣传教育活动,指导居民合理营养,平衡膳食。  相似文献

BACKGROUND: Inadequate intake of calcium-rich foods among US adults and children is a public health concern. Fluid milk is one of the best calcium sources because of its bioavailability and its versatility as both a beverage and a complement to various solid foods. One of the foods commonly consumed with milk is ready-to-eat breakfast cereal (RTEC). OBJECTIVE: We aimed to establish the association between the intake of RTEC, milk, and calcium within the context of the most current population dietary practices. We hypothesized that RTEC consumption facilitates milk consumption and is associated with adequacy of calcium intake in the US population. DESIGN: The most recent National Health and Nutrition Examination Survey, 1999-2000, data set was used as the source of data for this research. SUBJECTS/SETTING: US subjects aged 4 years and older (n=7,403), excluding pregnant and/or lactating women. Data were stratified according to sex and age (4 to 8 years, 9 to 13 years, 14 to 18 years, 19 to 30 years, 31 to 50 years, 51 to 70 years, and 71+ years), and then by consumption of breakfast, RTEC, and milk. STATISTICAL ANALYSES PERFORMED: SAS (release 8.1, 2000, SAS Institute Inc, Cary, NC) and SUDAAN (release 8.0.2, 2003, Research Triangle Institute, Research Triangle Park, NC) were used to calculate sample weighted means, standard errors, and population percentages. Multiple regression and multiple logistic regression models, with controls for covariates, were used to determine the predictability of total calcium intake from breakfast consumption compared to breakfast nonconsumption, and from inclusion of RTEC and milk in the breakfast meal compared with breakfast meal content without RTEC and milk. RESULTS: RTEC was predominantly consumed at breakfast. Average calcium intake at breakfast was seven times greater when RTEC was consumed with milk than when RTEC was consumed without milk. In multiple regression analyses, breakfast consumption, and milk consumption with or without RTEC all strongly predicted total daily calcium intake (P<0.05) while controlling for covariates. The percentage of respondents below the Adequate Intake level for calcium was higher for non-RTEC breakfast consumers than for RTEC breakfast consumers in all age-sex categories except those older than age 70 years, and girls aged 9 to 13 years. CONCLUSIONS: Consumption of RTEC at breakfast was associated with greater daily intake of both milk and calcium in all age and sex groups in the US population.  相似文献

The survey included 24-h recalls, physical measurements and a food-habits questionnaire collected during the period February 1995-March 1996, with a nationally representative sample of 3,007 Australians aged between 2 and 18 years. The median nutrient intakes at breakfast and the proportion of the daily total contributed by breakfast were calculated. Differences between regular breakfast eaters and breakfast skippers in terms of nutrient intake, body mass index and health status were compared using student t-tests. The findings show the typical breakfast consumed by young Australians was low in fat, high in carbohydrate and a good source of thiamin, riboflavin, niacin, calcium and magnesium. Those who did not eat breakfast cereal were much more likely to have inadequate nutrient intakes, especially of thiamin, riboflavin, calcium, magnesium and iron. There was no difference between the fat intake and the body mass index of regular breakfast eaters compared with breakfast skippers. Regular breakfast eaters were more likely to rate their health as excellent or good than those who skip breakfast, but there was no difference between the fat intake or the body mass index of regular breakfast eaters compared with breakfast skippers. BACKGROUND: Elevated serum total homocysteine (tHcy) concentration is implicated in the etiology of cardiovascular disease (CVD). A significant food source of B-vitamins involved in homocysteine metabolism is ready-to-eat cereal (RTEC) in the U.S. OBJECTIVE: To test the hypothesis that tHcy concentration is inversely associated with RTEC intake and blood B-vitamin levels in the U.S. general population. DESIGN: A cross-sectional study using data from the National Health and Nutrition Examination Survey (NHANES 1999-2000). Data were stratified according to age and gender. Men and women > or = 19 y (n = 4,218) were classified as RTEC consumers (RTEC-C; n = 824) and RTEC non-consumers (RTEC-NC; n = 3,394) based on 24-hr dietary recall. RESULTS: Forty nine percent of participants showed folate intake with below the estimated average requirements (EARS). Serum folate and red blood cell (RBC) folate concentrations were increased with age in both genders, and significantly higher among RTEC-C than RTEC-NC (p < 0.05). Mean tHcy concentration increased with age, and was significantly lower among both men and women RTEC-C than among RTEC-NC. In multivariate linear regression analyses, RTEC consumption strongly predicted serum folate and tHcy concentrations. CONCLUSION: tHcy concentrations were significantly lower in RTEC-C among the majority of age/gender groups than in RTEC-NC. RTEC consumption may potentially reduce the risk for CVD, mediated through tHcy.  相似文献

OBJECTIVE: To test the hypothesis that breakfast consumption is associated with weight status measured by body mass index in US adults. DESIGN: Analyses of data from the National Health and Nutrition Examination Survey, 1999-2000. PARTICIPANTS/SETTING: Men and women aged > or = 19 years (N=4,218), excluding pregnant and/or lactating women. STATISTICAL ANALYSES PERFORMED: SAS (release 8.1, 2000, SAS Institute Inc, Cary, NC) and SUDAAN (release 8.0.2, 2003, Research Triangle Institute, Research Triangle Park, NC) software were used to calculate sample-weighted means, standard errors, and population percentages of breakfast consumers. Multiple logistic and linear regression models, with controls for covariates, were used to determine the predictability of body mass index from breakfast consumption and from inclusion of ready-to-eat cereal (RTEC) in the breakfast meal. RESULTS: Breakfast consumers were more likely than breakfast nonconsumers to be older, female, white, nonsmokers, regular exercisers, and trying to control their weight. For women, daily energy intake was higher among breakfast consumers than among breakfast nonconsumers; for both men and women, energy intake from fat among RTEC breakfast consumers was significantly lower than among non-RTEC breakfast consumers, whereas energy from carbohydrate among RTEC breakfast consumers was significantly higher than among non-RTEC breakfast consumers. For women, the odds ratios for BMI > or = 25 were lower for breakfast consumers (odds ratio = 0.76) and RTEC breakfast consumers (odds ratio = 0.70) compared with breakfast nonconsumers and non-RTEC breakfast consumers, respectively, after adjusting the models for covariates. When RTEC consumption was added as a covariate, breakfast consumers no longer exhibited significantly lower odds ratios compared with breakfast nonconsumers. Furthermore, regression analyses supported an inverse association between RTEC breakfast consumption and body mass index in women (regression coefficient = -0.37, P<.01) after adjusting for covariates. CONCLUSIONS: When we document the association of breakfast consumption with lower prevalence of overweight and obesity, types of meal should be considered as an important determinant. RTEC breakfast consumption, associated with a desirable macronutrient profile for preventing obesity, predicted weight status in women, but not in men. In addition to sex difference in the association of breakfast consumption and RTEC breakfast consumption with lower prevalence of overweight, the effects of physiological variables and health-related behaviors on the relationship between total and RTEC intake at breakfast and weight status, remain to be established.  相似文献

OBJECTIVES: To examine if and how ready-to-eat cereals (RTEC) contribute to the quality of the diet of children, adolescents and young adults in a Mediterranean setting. METHODS: A random sample of 3534 subjects aged 2 to 24 years in Spain was studied. Food and nutrient intakes were determined by a 24 hour recall. RTEC consumption was assessed by a quantitative food frequency questionnaire. Additional questions on socioeconomic level and nutritional knowledge were administered. Cereal consumption was classified into non-consumers and daily intakes between 1 and 20g, 21 and 40g, and more than 40g. After excluding the underreporters the final sample consisted of 2852 individuals. RESULTS: About half of the population (49.8%) reported eating RTEC. Macronutrient profile improved with increasing cereal consumption. Intakes of thiamine, riboflavin and vitamin B6 increased significantly with increasing consumption of RTEC in all age-sex groups, whereas niacin and folate intake improved in almost all groups and calcium, iron and vitamin D in at least half of the groups. Except for magnesium, vitamin B12 and vitamin E in males, consumption of RTEC was significantly associated with increased coverage of the daily nutrient requirements for all micronutrients studied. Higher levels of RTEC consumption was associated with a greater consumption of dairy products, and related to better breakfast quality. CONCLUSIONS: Level of RTEC consumption is associated with a better nutritional profile in the diets of Spanish children, adolescents and young adults and a lower risk for inadequate micronutrient intakes. RTEC consumers have better quality breakfasts, in terms of both food choices as well as energy and nutrient content.  相似文献

目的 了解我国南北方居民一年内营养素摄入量的变化 ,判定营养素摄入是否具有季节性差异。方法 采用 2 4小时膳食回顾调查法对中国典型的北方农村和南方城乡三地合计约 30 0名健康成年居民进行膳食调查 ,一年内共调查 6次 ,两月一次 ,每次连续调查 3天。根据食物摄入量的调查结果 ,计算出每人每天能量和各种营养素的摄入量。结果 三地居民平均每天的能量、蛋白质以及脂肪的摄入量是充足的。我国典型南北方居民能量以及三大营养素 (蛋白质、脂肪和碳水化合物 )摄入量的季节性差异较小 ;硫胺素、核黄素、维生素E、烟酸以及锌的季节性变化也不大 ;视黄醇当量、抗坏血酸、钾和钙的摄入量则存在明显季节性差异。结论 通过对我国南北方三地一年多次的膳食调查结果分析 ,农村地区若避开 1月份的农闲季节和 7月份的农忙季节 ,其它月份进行的营养调查结果可以代表调查对象平常的膳食摄入情况 ;城市地区在一年的任何月份进行营养调查 ,对结果的影响都不大  相似文献
