营养教育效果综合评价问卷的应用与分析

摘    要:目的应用"营养教育效果综合评价问卷"对城乡成年人群的营养教育效果进行分析评价,了解大众营养教育对成年居民营养素养的影响及验证综合评价问卷的适用性。方法在江西省南昌市选取两个大型企业(以下简称甲厂、乙厂),每个企业各整群抽取200名18~59岁成年人作为城市组观察对象。在江西省南丰县选取两个村庄(以下简称甲村、乙村),每个村各整群抽取200名18~59岁成年人作为农村组观察对象。其中甲厂、甲村分别作为城市、农村的对照组,乙厂、乙村分别作为城市、农村的营养教育组。对营养教育组开展为期一个月的营养科普教育。教育前后,应用综合评价问卷进行基线和终期调查。比较分析营养教育的效果。结果群体效果分析显示,营养教育后,对照组问卷各项得分均无明显改变,营养教育组营养知识、营养态度、饮食行为、社会环境影响分别增加8.4、1.6、7.5、4.0分,总分增加21.5分,营养教育效果自评为8.4分。营养教育组营养知识、营养态度、饮食行为、社会环境影响及总分的差值百分比(营养教育前后得分的差值与满分之间的比值)分别为26%、11%、27%、25%、24%,营养态度改变较小。营养教育后,得分满分比分别为92%、91%、68%、74%、81%。调查员和调查对象均认为综合评价问卷清晰易懂、填写简便、内容长短适宜。结论此次营养教育取得了较好的效果,"营养教育效果综合评价问卷"得到了较好地应用,其广泛的适用性有待今后相关研究的深入验证。

Abstract:Objective To evaluate the results of nutrition education for adults,applying the nutrition education comprehensive evaluation questionnaire,for exploring the effects of public nutrition education and practicability of the questionnaire.Method Two large-scale factories(hereafter referred to as ‘factory A and factory B’) were selected from Nanchang,Jiangxi Province,then two hundred adults aged 18 to 59 years were cluster sampled from each factory as urban groups.Two villages(hereafter referred to as ‘village A and village B’) were selected from Nanfeng county,Jiangxi Province,then two hundred adults aged 18 to 59 years were cluster sampled from each village as rural groups.Factory A and village A were control groups of urban and rural respectively,while factory B and village B were intervention groups of urban and rural respectively.The intervention groups received a one-month nutrition education,before and after that comprehensive questionnaires were applied to each group to compare the results of nutrition education.Results Group analysis showed that after nutrition education,the score of nutrition knowledge,attitude to nutrition,dietary behaviors,social environment influence and total score in intervention group increased by 8.4,1.6,7.5,4.0 and 21.5 points respectively.Self-evaluation of nutrition education got 8.4 point.For intervention groups,the score difference ratio(the ratio of score difference after and before education to full score) of nutrition knowledge,attitude to nutrition,dietary behaviors,social environment influence and total score was 26%,11%,27%,25% and 24%,respectively.The full score ratio after education was 92%,91%,68%,74% and 81% respectively.Both investigators and respondents stated that the comprehensive evaluation questionnaire was clear,easy to answer and suitable in content.Conclusion The comprehensive evaluation questionnaire of nutrition education had been applied well in this study and obtained good results.The wide application of this questionnaire needs to be verified in future studies.
