黄鳍马面魨肌肉主要营养成分分析与评价

摘    要:目的分析测定南海海区黄鳍马面魨的肌肉营养成分,对其营养价值进行综合评价。方法采用现时的国家标准方法测定粗蛋白质、粗脂肪、灰分、氨基酸和脂肪酸含量。结果黄鳍马面魨肌肉鲜肉的粗蛋白质含量(17.01±0.12)%;粗脂肪含量(0.67±0.23)%;水分含量(79.81±0.36)%;灰分含量(1.88±0.27)%;18种氨基酸总量为67.70%,其中8种必需氨基酸含量占氨基酸总量的44.43%,必需氨基酸与非必需氨基酸比值79.96%,氨基酸得分(AAS)2435;粗脂肪中含28种脂肪酸,以油酸的含量最高,二十碳五烯酸EPA与二十二碳六烯酸DHA之和占总脂肪酸含量的17.03%;鱼肉富含Ca、Fe、Zn等必需金属元素,有害元素含量均在允许范围之内。结论黄鳍马面魨肌肉蛋白质含量较高,必需氨基酸含量较丰富,粗脂肪含量较低,是营养价值较高的鱼类。

Abstract:Objective To analyse the nutritional components of Navodon xanthopterus in South China Sea,and evaluate their nutritional value.Method The contents of crude protein,crude fat,ash,amino acids and fatty acid in the muscle of Navodon xanthopterus were determined with the current national standard method.Results The crude protein content was(17.01±0.12)%;crude fat content was(0.67±0.23)%,the moisture content was(79.81±0.36)%,ash content was(1.88±0.27)% in muscle.The content of total amino acids was 67.70%,among which 8 kinds of essential amino acids accounted for 44.43%,essential amino acids and non-essential amino acid ratio 79.96%,amino acid score 2435.There were 28 kinds of fatty acids in the crude fat,among which the content of oleic acid was the highest,and the content of eicosapentaenoic acid(EPA) and docosahexaenoic acid(DHA) acconted for 17.03%.There were Ca,Fe,Zn and other essential minerals in the muscle of Navodon xanthopterus and the content of harmful elements was in allowable range.Conclusions The content of protein is higher and crude fat content is lower,and the essential amino acids are abundant,so Navodon xanthopterus has high nutritional value.
