餐饮业食品卫生安全水平2种评价方法的比较研究

摘    要:目的检验《重大活动食品卫生安全水平快速评估表》的可靠性及应用价值。方法对巴城镇21家大中型餐饮单位分别用《重大活动食品卫生安全水平快速评估表》、《餐饮业经常性卫生监督量化评分表》进行打分,对每家单位总得分进行配对t检验。结果21家餐饮单位一票否决指标及关键监督项目指标均为满分,食品卫生安全水平快速评估评分法与餐饮业经常性卫生监督量化评分法经配对t检验,P〉0.05。结论2种方法一致性较强。食品卫生安全水平快速评估表更具有指标数量少、结构严谨、计算简单等优点。
