摘    要:目的]全面了解月饼的卫生质量,探讨影响卫生质量的因素,更好地加强卫生监督执法力度,保障消费者的食用安全。方法]对安顺市2003~2004年月饼卫生监测结果进行分析。结果]检测样品228份,合格率为88.16%;铅、砷均合格,未检出致病菌,2003、2004年酸价合格率为89.83%、95.49%,过氧化值合格率为97.46%、97.39%,细菌总数合格率99.17%、96.6%,大肠菌群合格率99.15%、96.36%;本地产品合格率高于外地产品。结论]有11.84%的月饼样本不合格,应进一步强化监督管理。

Abstract:Objective]To fully understand the hygienic quality of mooncakes, explore the related factors, enhance health supervision and ensure the safety of consumers. Methods]Analysis was made on surveillance data of mooncakes in Anshun city 2003-2004. Results]Of 228 samples, the qualified rate was 88.16 %. Both lead and arsenic were qualified and no pathogen was detected. The qualified rate was 89.83 % and 95.49 % in acid value, 97.46 % and 97.39 % in peroxidation value,99. 17% and 96.6% in total bacterial count and 99.15% and 96.36% in coliform. And the qualified rate was higher in local products than products from other places. Conclusion] 11.84 % of mooncake samples are not qualified, therefore supervision should be strengthened.
