奉化市饮食行业餐具卫生状况调查

摘    要:目的了解奉化市饮食行业餐具卫生消毒质量状况,为加强餐饮业卫生监督管理提供依据。方法用大肠杆菌纸片法,对本市不同规模饮食行业消毒后餐具进行了抽样检测和质量评价。结果 3年里合格率有显著差异,2008年合格率最高;不同规模经营单位餐具卫生检测结果有显著差异,专业消毒餐具提供商消毒餐具合格率最高;不同消毒方式餐具卫生检测结果有显著差异,其中蒸汽或煮沸方式消毒餐具合格率较高。结论卫生监督部门加大力度检查的情况下能确保餐具卫生合格,专业消毒餐具提供商有严格的消毒管理制度和专业人员每天可确保执行清洗消毒程序能确保餐具卫生合格,不同消毒方式中以蒸汽或煮沸方式样品合格率较高。

Abstract:Objective To understand sanitation quality and disinfection of tableware in catering industry of Fenghua in order to provide the basis for supervision and management. Methods Sampling detection and filter paper method of E.coli were used to evaluate the sanitation quality of tableware in different scales of catering industry of Fenghua after disinfection.
