沧州市2006-2007年食源性致病菌污染状况调查

摘    要:目的了解沧州市食品中致病菌污染状况为该市食源性疾病和食物中毒监测提供科学依据。方法按国标方法和2005年全国食源性致病菌规定方法,对8类食品进行沙门菌、副溶血弧菌、单增李斯特菌、肠出血性大肠埃希菌、金黄色葡萄球菌、空肠弯曲菌分离、生化及血清型鉴定。结果160份样品中共检出致病菌18株,总检出率为11.25%。其中沙门菌7株,检出率为4.38%;单增李斯特菌7株,检出率为4.38%;副溶血弧菌4株,检出率2.50%;金黄色葡萄球菌、肠出血性大肠埃希菌、空肠弯曲菌未检出。结论沧州市食品中存在食源性致病菌的污染,其中的生熟肉制品和水产品污染最严重。卫生监督部门应加大对上述产品流通、销售和餐饮的管理,防止食源性疾病的发生。

Abstract:[ Objective ] To study the contamination status of the Salmonella, the Vibrio phrahaemolyticus, the Listeria monocytogenes, EHEC (O157 : H7) , the Staphylococcus aureus and the Campylobacter jejuni in food in Cangzhou city, to provide the scientific basis for monitoring of food-borne disease and food poisoning. [ Methods] According to national standards of GB 4789 and international food-borne pathogens test method, the Salmonella, the Vibrio phrahaemolytieus, the Listeria monocytogenes, EHEC [O157 : H7 ) , the Staphylococcus aureus and the Campylobacter jejuni were isolated from 8 kind of foods, and identified by biochemistry and serotype. [ Results] Eighteen strains of pathogens were isolated from the 160 specimens. Among them, 7 (4. 375% ) were the Salmonella enterica, 7 ( 4.375% ) were the Listeria monoeytogenes and 4 ( 2.5% ) were the Vibrio phrahaemolyticus. EHEC (O157 : H7) , the Staphylococcus anreus and the Campylobacter jejuni were not found. [ Conclusion] The food-borne pathogens were detected in foods in Cangzhou city, in which, the contamination of raw meat product and the aquatic product was the most serious. The institution for health inspection and supervision should strengthen the management of sales and circulation of these products to prevent the food-borne disease.
