一起副溶血性弧菌合并大肠埃希菌感染所致食物中毒事件调查研究

摘    要:目的分析本次食物中毒事件的发生原因和可疑危险因素,为预防此类事件提供依据。方法2018年9月9日,天津市滨海新区某企业发生食物中毒事件,天津市疾病预防控制中心开展流行病学调查,采用病例对照研究分析查找可疑餐次、可疑食品,采集可疑食物及病例样本进行病毒及致病菌检测。结果共搜索到81名病例,罹患率12.64%。病例对照研究显示,9月8日午餐为可疑暴露餐次,对9月8日午餐菜品进行单因素分析显示,食用红烧双圆(OR=11.07)、肉丝杏鲍菇土豆丝(OR=3.38)增加发病风险,分层分析显示,单独食用红烧双圆(OR=15.63)为发病危险因素。9份病例粪便样本中检出副溶血弧菌阳性,其中合并肠致病性大肠埃希菌阳性4份,合并肠产毒性大肠埃希菌阳性1份。结论该事件为一起副溶血性弧菌合并大肠埃希菌感染导致的食物中毒事件,建议加强对餐饮机构的监管,规范卫生操作和消毒流程,提高卫生安全意识,防止类似事件发生。

Investigation on a food poisoning event caused by Vibrio parahemolyticus and Escherichia coli

Abstract:Objective To identify the causes and suspected risk factors of a food poisoning event.Methods An epidemiological investigation was conducted by Tianjin CDC on a food poisoning event occurred in an enterprise in Binhai new area of Tianjin on September 9,2018.Suspected food samples and samples from cases were collected to identify the pathogen.Results A total of 81cases appeared with the incidence of 12.64%.The case-control analysis showed that the lunch on September 8was a potential meal led to this event.The singlefactor analysis for the lunch dishes showed that eating braised double circle(OR=11.07)and meat mushroom potato(OR=3.38)increased the risk of poisoning.Stratified analysis showed that eating the braised double circle alone was the risk factor(OR=15.63).Vibrio parahaemolyticus was detected in 9fecal specimens of 9 cases,of which 4were positive for enteropathogenic escherichia coli and 1was positive for enterotoxigenic escherichia coli.Conclusions This food poisoning event is caused by combined contamination of Vibrio parahaemolyticus and Escherichia coli,it is suggested that food safety monitoring should be strengthened to prevent food poisoning.
