食品中总的、不溶性及可溶性膳食纤维的酶-重量测定法

摘    要:为了分析测定膳食纤维的不同组分 ,参照AOAC推荐的酶 重量法建立了分别测定总的、不溶及可溶性膳食纤维含量的方法。结果表明本方法可以分析不同种类的食物样品 ,批间和批内RSD分别为 2 0 4%~ 7 85 %和 3 42 %~ 5 2 3%。提示该方法的重复性较好 ,适用范围广。

Abstract:For studying the contents of dietary fiber in general foods and functional foods, a enzymatic-gravimetric method recommended by AOAC was established in our laboratory. The method for the determination of total, soluble and insoluble dietary fiber in foods and functional foods could be used for many other kind of foods. The relative standard deviations (RSD) of reproducibility between-run and within-run were 2.04%-7.85%, 3.42%-55.23% respectively. The repeatability of the methods was good, and the methods are suitable for many foods.
