河北省散装食品卫生现状调查及监管对策

目的了解河北省散装食品卫生现状，加强散装食品卫生管理。方法用随机抽样的方法从全省11个市中的4个市随机抽取20家食品超市，采用统一调查表，对其散装食品卫生管理情况进行监督检查。结果20家超市中没有一家超市能做到调查表中的15项检查项目全部合格，存在的主要问题是：过期食品的处理记录不详；从业人员销售直接入口散装食品时口罩、手套及帽子配戴不全或不规范；采购散装食品时证件索取不全；冷藏冷冻设施数量不足或运转不正常。结论我省散装食品卫生状况不容乐观，卫生监督部门一方面要加大执法力度，确保法律、法规及《规范》的实施，另一方面要加强散装食品卫生知识的宣传及培训工作，更好地调动经营者的守法自觉性和主动性，提高消费者的卫生意识和自我保护意识。

Investigation of the Hygienic Condition of the Food in Bulk in Hebei Province

[Objective] To learn the hygienic condition of the food in bulk in Hebei Province and strengthen the hygienic management.[Methods] 20 supermarkets were randomly selected from 11 cities for the investigation;questionnaire was used to investigate the hygienic condition of the food in bulk.[Results]None of the supermarkets was totally eligible for all the 15 items in the questionnaire;the major problems were incomplete record for expired food disposal,unfit wearing of hygienic materials in the selling process,nonstandard certificate for food stock and so on. [Conclusion] The hygienic condition of the food in bulk in this province is unsatisfactory;hygienic supervision work as well as the consumers' hygienic consciousness should be improved.
