广州市肉及肉制品安全危害状况分析

摘    要:目的了解广州市目前肉及肉制品安全状况,为政府制订有效的监控措施,消除安全危害提供科学依据:方法在2007-2008年对广州市餐饮业、超级市场和肉菜综合市场随机采集生畜禽肉和熟肉制品样品进行兽药、金属元素、食品添加剂、致病微生物等项目的检测。结果生畜禽肉中兽药残留超标率达35.6%,4.85%样品的铅含量和4.01%样品镉的含量超标,熟肉制品滥用或违规使用食品添加剂现象严重,熟肉制品大肠菌群检测不合格率迭43.80%。生、熟肉均检到单核细胞增生李斯特氏菌。结论广州市生畜禽肉和熟肉制品兽药残留和致病微生物污染严重。危及广州市食品安全,有关部门需进一步采取控制措施,加大监测频率和原因。
