胭脂萝卜色素的提取及其性质研究

摘    要:“脂胭”萝卜经100%乙醇浸提,施转蒸发挥干,获得赭红色色素结晶。经对其多种性质研究表明,该色素水溶性极佳,不溶于大多数有机溶剂,水溶液最大吸收波长为530nm。耐自然光和紫外线照射,热稳定性良好,颜色可随PH改变而变化,常见食品添加剂不影响着色效果。同时,原料丰富,色素含量高,着色性能好,是十分理想的天然色素之一。

Abstract:Pigment in carmine radish was isolated by using 100%alcoholic extraction and studiedfor the characterization.The result showed that the purplish red color changes along withPH variation and is relative stable at high temperature under natural light and ultravioletrays and many food additives.The maximum absorption of pigment was observed at wave-length 530nm.The coloring value of this natural colorant is very high.Raw materials arerich and cheep in natural resources.It is potentially useful in the food industry.
