摘    要:目的:了解北京市通州区居民的主要消费食品中食源性致病菌污染的实际情况,寻找可能引起食源性疾病的重点食品,为准确快速查找食物中毒原因提供方法。方法:依据国标方法,对样品分别进行沙门氏菌、空肠弯曲菌、大肠杆菌O157:H7、金黄色葡萄球菌、副溶血性弧菌、单增李斯特氏菌分离、生化及血清学鉴定。结果:共采集样品121件,有35件样品检出致病菌,6种食源性致病菌总检出率为28.93%;其中单增李斯特菌检出率为14.88%,金黄色葡萄球菌检出率11.57%,沙门氏菌检出率为7.44%,未检出大肠杆菌O157:H7、副溶血弧菌及空肠弯曲菌。生畜肉类污染最严重,其次是熟肉制品和生牛奶。通州区熟肉制品检出率高于2003年北京市的监测值。结论:食源性致病菌污染较为严重,应引起相应部门关注。

Abstract:Objective:To estimate the situation of mainly consumption food contamination in Tongzhou District in Beijing.To determine the dangerous food that result in food pollution.To provide the way so that find fleetly and truly the reason of food poisoning.Methods:According to examination method of GB,Salmonclla,Listeria monocytogenes,EHEC O157:H7,Staphylococcus and Vibrio phrahaemolyticus from all samples were separated,biochemical reaction,serology identification to strains was tested.Results:121samples were tested from Tongzhou Dis-trict,35 samples were detected for pathogen.The overall detectable rate is 28.93%;The strain and detectable rates for Listeria monocyto-genes Staphylococcus and Staphylococcus aureus are 14.88%,11.57%,7.44%.EHECO157:H7and Vibrio phrahaemolyticus were not detect-ed.In all 7 kinds of food,the detectable rate of raw meat is the highest;meat and raw milk is the second.Conclusions:Pathogen contamina-tion of foods in Tongzhou District is serious and more attention should be paid by relevant departments.
