摘    要:目的:探讨反复煎炸食品的菜油对小鼠急性和亚急性毒性作用。方法:采用毒理学方法观察煎菜油对小鼠体重、肝肾脏器系数和微核率的影响,并作F检验、q检验、t检验和u检验。结果:煎炸菜油0.2ml/10g组、0.1ml/10g组和0.05ml/10g上鼠的体重均显著地低于食用菜油对照组(P〈0.01),但各组小鼠的肝肾脏器系数和微核率间的差异均无显著性(P〉0.05)。结论:煎有油对小鼠具有一定的毒性作用。

Abstract:Objective:To study the toxic effects of the repeatedly used frying rapeseed oil in mice.Methods:The effects of rapeseed oil after repeatedly used for frying on the body weight,the liver and kidney organ index and the rate of micronucleus were studied with acute and subacute experimental toxic test in mice.The experimental data were calculated statistically in F test, q test, t test and u test.Results:The body weight of mice treated with rapeseed oil repeated used for frying in dose of 0.2 ml/10 g,0.1 ml/10 g and 0.05 ml/10 g groups was obviously lower than that with fresh unused rapeseed oil group( P <0.01),but the liver and kidney organ index and the rate of micronucleus had no significantly difference in all groups( P >0.05).Conclusions:The rapeseed oil repeatedly used for frying is significantly toxic for mice.
