南京市31家裱花蛋糕的卫生调查与分析

摘    要:目的 了解本市糕点店制作裱花蛋糕的卫生状况与产品卫生质量。方法 抽查 31家糕点店 ,检查其基本卫生设施与自身卫生管理状况 ,并采集现场制作的裱花蛋糕 ,按国家标准方法进行微生物检测。结果  31家糕点店基本卫生设施不够齐全 ,自身卫生管理不够严格 ,采样检测合格 9份 ,合格率仅为 2 9.0 %。结论 卫生监督部门应加强监督检查与指导 ,保障裱花蛋糕食用安全

Abstract:Objective To understand hygienic situation and quality of cases. Methods Basic equipment and health management of 31 cake factories were investigated randomly. Some samples were collected and detected for microscope according to national standard method. Results the results indicated that the equipment was incomplete and the management was not strick. Only 9 samples were qualified. The qualified rate was 29.0%. Conclusions Health Inspection Bureau should strengthen inspection and guidance in order to ensure the cake.
