摘    要:目的 了解某铁路职工食堂膳食营养情况,为实施营养干预提供必要的参考.方法 采用随机抽样与问卷调查的方式进行研究.结果 职工每日摄入的食物当中,奶制品、水果、鱼虾、豆类以及坚果等明显偏低,而肉类摄入量明显偏高;脂肪、钠等明显偏高,而热量、硫胺素、蛋白质等营养元素则存在明显不足;每日三餐的热能分配明显不合理,早餐和中餐仅占...

Abstract:Objective To understand the dietary nutritional status of a railway staff canteen,and to provide necessary reference for the implementation of nutritional intervention.Methods To conduct research using random sampling and questionnaire survey.Results Among the daily food intake of employees,dairy products and fruits,fish,shrimp,beans and nuts were significantly lower,while meat intake was significantly higher;fat,sodium,etc.were significantly higher,while calories,thiosulfame,protein and other nutrients were obvious shortcomings;the distribution of heat energy for three meals a day was obviously unreasonable.Breakfast and lunch only account for 21.5%and 26.8%,which were quite different from the recommended ratios of 30%and 40%,while the proportion of dinner was as high as 51.7%,which was significantly higher.The recommended ratio was 30%;the proportion of the three major nutrients in the total calories was unreasonable,the fat-to-heat ratio was significantly higher than the recommended ratio,and the carbohydrate was lower than the recommended ratio.Conclusion The railway employees'dietary nutrition is unbalanced and the situation is worrying and urgently needed to take nutritional intervention measures to ensure a balanced diet in the staff canteen.
