公用餐(饮)具消毒效果检测分析

摘    要:目的检测本市公用餐(饮)具消毒效果。方法对不同单位、品种、消毒方法、存放时间的公用餐(饮)具4210件采用纸片法检测大肠菌群。结果4210件餐(饮)具合格2615(62.11%)。不同品种餐(饮)具问无明显差异,不同单位、消毒方法、不同的存放时间及方法间均存在显著性差异(P<O.005)。结论建议采用蒸汽及化学消毒方法当日消毒,同时加强卫生监督管理和检测力度,提高餐(饮)具消毒合格率。

Abstract:Objective: To examine the sterilizing effects of public dishware in the city. Methods: We have examined coliforms on 4210 pieces of public dishware by scrip method for different eating establishments, variety, sterilizing methods and storing time. Results: 2615 of 4210 pieces of dishware pass, there is nonsignificance in different variety .there is significance in different eating establishments, sterilizing methods and storing time. Conclusions: It is advised to use sterilizing methods of seethe, steam and chemistry in the day , and reinforce health supervision ,management and examination, increasing the sterilization eligible rate of dishware.
