太原市城市居民食物结构的现状及2000年的调整目标

太原市城市居民145万,食物结构兼有华北及山西城镇居民之特色。1988年食物结构和营养的主要问题是:动物性食物及大豆比例过低,钙、维生素 A 和核黄素数量上明显不足,蛋白质、钙、铁、维生素 A 的质量较差。推荐的2000年食物结构调整目标中,动物性食物和大豆适当增加,薯、菜、果、油大体不变,谷类稍有减少。这个食物结构将使居民的营养状况进一步改善,但钙、维生素 A 和核黄素仍略显不足。为实现这一目标,还提出了若干建议。

PRESENT STATUS AND FUTURE GOAL IN 2000 OF FOOD CONSUMPTION PATTERNS OF THE URBAN RESIDENTS IN TAIYUAN

There are 1.45million urban residents in Taiyuan,whose food consumption pattern can show the general characteristics of food con- sumption of the urban residents in Shanxi Province and North China. The main defect of the food pattern in 1988 was that animal food and soybean were too low,which resulted in deficient intakes of calcium, VA,VB_2 and poor quality of protein,calcium,iron and VA.A goal of food consumption pattern for the year of 2000 is reached by an ap- propriate increase of animal food and soybean,maintainances of yam, vegetable,fruit and vegetable oil,and a decrease of grain.The future food pattern will improve the nutritional situation of the residents,but calcium,VA and VB_2 will be a little deficient.Some suggestions are made in order to achieve the goal.
