摘    要:目的:了解武汉市餐饮具的卫生状况,为卫生行政监管提供科学依据。方法:用大肠菌群快速纸片法进行采样和检测,按《GB14934-94食(饮)具消毒卫生标准》进行评价。结果:2008年-2010年共检测4417件餐饮具,合格4024件,总体合格率为89.2%,餐饮具合格率呈逐年上升趋势;不同规模的餐厅的餐饮具检测结果差异显著,大型酒店合格率最高为98.2%,小型饭店合格率最低为77.2%(χ2=277.99,P<0.01);不同季节检测结果差异明显,春冬两季合格率较高,夏秋两季合格率较低(χ2=110.56,P<0.01)。结论:武汉市餐饮业中使用的餐饮具卫生状况整体情况较好,建议卫生监督部门加强对小型餐馆和夏秋两季的餐饮具卫生监管力度。
