摘    要:目的:了解江苏省苏州市市售鲜肉注水情况。方法:采用中华人民共和国国家标准GB/T 9695.15-2008《肉与肉制品水分含量测定》对苏州市场上的鲜肉进行水分含量测定。结果:2010年苏州市场上鲜肉水分含量超标率为7.14%(4/56)。结论:需进一步加强鲜肉注水监测力度,保护消费者健康。

Abstract:Objective:To understand the situation of the water-injected pork in Suzhou.Methods: The moisture contents in samples were determined by GB/T 9695.15-2008.Results: The moisture contents were 7.14%(4/56)of the meat samples which exceeded the national standard of food hygiene in Suzhou in 2010.Coclusion: It is necessary to further strengthen the water-injected pork control for protecting the health of consumers.
