| 摘 要： | 目的:了解和掌握厦门市翔安区个体榨油作坊的卫生现状以及现榨花生油卫生质量,为加强卫生监督管理提供科学依据。方法:现场调查32家个体榨油作坊并随机采样44份花生油和43份花生原料,按照GB/T 5009检测黄曲霉毒素B1、酸价、过氧化值、砷、铅、镉、铬等项目,依据GB 2716-2005和GB 2761-2005进行评价。结果:32家个体榨油作坊生产条件和卫生环境较差,采集的44份成品花生油中,合格29份,合格率为65.9%,主要不合格项目为铅、黄曲霉毒素B1、过氧化值。镉、铬平均含量分别为3.2μg/kg、0.63 mg/kg。43份花生仁原料中黄曲霉毒素B1含量全部符合GB 2716-2005标准,合格率100%。结论:应加强对现榨花生油监测和监督管理,提高现榨花生油的卫生质量。
