柳州市两所老人公寓膳食调查

摘    要:目的了解柳州市老人公寓目前的营养状况,并针对存在的问题提出改进措施。方法采用记账法, 对柳州市两所老人公寓58位老人(男16人,女42人)进行为期1个月的膳食调查。结果生活自理老人热能的摄入量占参考摄入量(DRIs)的84.8%,铁占DRIs 86.7%,基本能满足需要,蛋白质、烟酸、维生素C摄入不足,钙、维生素B1、维生素B2严重缺乏,食盐的摄入量为7.01g;生活无法自理老人热能的摄入量为DRIs的89.9%,基本满足需要,铁占DRIs的108.9%,摄入量充裕,维生素B1、烟酸、维生素C摄入不足,钙、维生素B2严重缺乏,食盐的摄入量为4.96g。结论柳州市这两所老人公寓的膳食结构不太合理,应加强对老年人的宣传教育,提高营养知识, 调整膳食结构,提高各种食物的总摄入量,增加食物的品种,以提高能量、蛋白质及各种维生素的合理摄入量。

Abstract:Objective To investigate the current nutrition condition of the elder in the elder people's flat in Liuzhou in order to raise improvement measures according to the problems. Methods Make a one - month dietary survey of 58 old people (16 males and 42 females) in two elder people's flats in Liuzhou with the accounting method. Results For the old who can self care, the energy intakes are 84. 8% of the Dietary Reference Intakes (DRIs) , in which iron intakes account for 86. 7% and meet the average energy requirements; Protein, Nicotinic acid, Vitamin C intakes are inadequate; Calcium, Vitamin B1 and Vitamin B2 are in serious deficiency; Salt intake is 7. 01 g. As for the old who cannot self care, the energy obtained is 89. 9% of DRIs, which generally meets the average energy requirements. Iron intake is enough and reaches 108.9% of DRIs; Vitamin B1, Nicotinic acid and Vitamin C intake are inadequate; Calcium and Vitamin B2 are in serious deficiency; Salt intake is 4. 96g. Conclusion The old in these two elder people's flats are having an improper diet structure. Health and nutrition education for the old should be enhanced to enable them to know more about balanced diet and adjust their diet structure, increase the food variety, in order to moderately increase the intakes of energy, protein and various vitamins.
