2004年济宁市城区餐饮业卫生现状调查

目的]了解济宁市城区餐饮业卫生安全现状，促进餐饮业卫生安全工作。方法]于2004年7～10月选择济宁市城区110个餐饮单位（其中大、中、小型餐饮单位分别为30、40、40）。结果]基本卫生状况，110个餐饮单位，卫生许可证持证率100％，其中大中型餐饮单位从业人员健康证、卫生知识培训率为95．16％（197／207），小型餐饮单位从业人员健康证、卫生知识培训率为71．84％（74／103）。食（饮）具洗刷、消毒、保洁，大型餐饮单位均设有独立的食（饮）具洗刷、消毒、保洁间，有专人负责，消毒效果较好，大肠菌群快速检验纸片合格率达90．19％（46／51）。中型餐饮单位大肠菌群快速检验纸片检测合格率为61．01％（36／59），小型餐饮单位食（饮）具洗刷、消毒、保洁卫生条件较差，无独立场所，大肠菌群快速检验纸片检测合格率为30．76%（16／52）。结论]进一步加强餐饮业卫生安全的管理，特别是小型餐饮单位，要完善卫生设施，严格卫生标准，以保证广大消费者饮食卫生安全。

Investigation on Sanitary Situation of Catering Enterprises in Urban District in Ji'ning, 2004

Objective]To understand the sanitary situation of catering enterprises in urban district in Jining in order to improve the health level of them.Methods]To investigate 100 catering enterprises in Jining's urban district from July to October in 2004(the number of big,middle,small ones was 30,40 and 40 respectively).Results]The rate of hygiene license holding was 100%,the rate of health certificates holding and health knowledge training of personnel from large and middle enterprises was 95.16%(197207),71.84%(74103) was for personnel from small ones.Large enterprises had separate rinsing rooms,disinfecting rooms and depurative rooms,for which persons specially assigned,so the effect of disinfection there was good,the eligibility rate of coliform test for large ones was 90.19%(4651),the eligibility rate of coliform test for middle ones was 61.01%(3659).The rinsing,disinfecting and depurating in small enterprises was worse,where there were no special places,the eligibility rate of coliform test was 30.76%(1652).Conclusion]It was necessary to strengthen the sanitary administration and supervision of catering enterprises,especially the small ones.
