2011年宿迁市食源性致病菌监测分析

摘    要:目的了解宿迁市各类食品中常见食源性致病菌污染情况,为食品安全风险评估及预警提供依据。方法依照国标和《江苏省食源性致病菌监测工作手册》,对采集样品进行病原菌分离鉴定。结果 891份样品中检出78株致病菌,检出率8.8%,其中沙门菌67株,占85.9%,单增李斯特菌5株,占6.4%,金黄色葡萄球菌3株,占3.8%,阪崎杆菌2株,占2.6%,O157:H7大肠杆菌1株,占1.3%,副溶血性弧菌未检出;10类食品中,生畜禽肉类致病菌检出率最高,为34.2%。结论宿迁地区主要消费食品存在食源性致病菌污染,主要以生畜禽肉类食品为主,应加强监管措施,定期提供预警信息。

Abstract:Objective To analyze the contamination of foodborne pathogens in Suquan, and to provide warning information and preventive measures. Methods The chromogenic media, API20E manual lath and ATB microbial identification system were used to isolate foodborne pathogens accordance to the method of GB and the Jiangsu Province Foodborne Pathogens Moni- toring Manual. Results Seventy eight strains of pathogens were detected from 891 samples; the total detectable rate was 8. 8%. The number of strains and detectable rates for Salmonella, Listeria monocytogenes coli, Staphylococcus aureus, Enter- obacter sakazakii and O157 E. coli were 67(85.9%) ,5(6.4%) ,3(3.8%) ,2(2.6%) and 1(1.3%), respectively, Vibrio para- haemolyticus was not detected. Among 10 category foods, foodborne pathogens in raw meat were detected with the highest rate of 34.2%. Conclusion Foodborne pathogen contamination in major consumption food was found in Suqian City. The main items of food contaminated by foodborne pathogens were raw meats. Preventive measures and early warning information should be provided.
