摘    要:本文对屠宰市场放开后,出口罐头厂用收购的原料牛肉加工成品罐头进行了研究。结果表明:成品罐头存在着保质期短、杂质增多、色泽暗、口感差等问题。现行的屠宰方法对出口牛肉罐头影响很大。

Abstract:The quality of canned beef, for which the raw beef was purchased and used by mus-lim canned food factory after the opening of slaughtering market,was studied in this paper. The results showed that a sevies of problems existed in the end prodrct such as increased for-eign matter?dimmed color ?bad chewy texture and shortened shelflife. The prevailing slaughtering system has a strong influences on the quality of export canned beef.
