上海市餐厅服务人员对餐厅控烟态度的调查

摘    要:目的了解餐厅服务人员对上海市公共场所控制吸烟条例的态度,评估其对不同禁烟规定的支持程度。方法采用方便抽样的方式选择上海市餐饮行业比较兴旺的两个区。按"大众点评网"上的"人气"排名,抽取63家中式正餐厅,对餐厅服务人员进行问卷调查。结果本次调查的餐厅服务人员95%以上知晓吸烟、被动吸烟损害健康,但对其具体危害的知晓率较低,男性吸烟率为59.7%;在几种保护非吸烟区免受烟草烟雾危害的禁烟措施中,餐厅服务人员认为完全禁烟的效果最好;三类餐厅83%以上的服务人员赞同餐厅禁烟使得就餐环境更舒适,有利于餐厅服务人员的健康,有利于顾客健康,实行餐厅禁烟有必要;目前被调查的餐厅服务人员对控烟条例的知晓率为52.4%,认为目前的控烟条例实施起来没有困难的在完全禁烟餐厅为21.2%,在不禁烟餐厅为13.3%;在阅读现行餐饮场所控烟法规后,81.7%的人支持现行法规。结论餐厅服务人员支持餐厅控烟,但是他们对条例不够了解。建议相关部门更多向餐厅服务人员宣传吸烟的具体危害和控烟条例,同时加强控烟条例的可操作性,并指导餐厅实施控烟,最终实现餐厅完全禁烟。

Abstract:Objective To learn and compare tobacco control attitude among restaurant service staffs in Shanghai. Methods A total number of 63 Chinese dining restaurants were conveniently sampled in Shanghai. Service staffs were selected from these restaurants. Results Over 95% of the restaurant service staffs investigated knew that both smoking and passive smoking damaged health, but few of them knew the specific harm. The male smoking rate was 59. 7%. The restaurant service staffs thought that complete non-smoking was the best effective measure among several measures for protecting people from smoking hazard in non-smoking areas. In three kinds of restaurants, more than 83% of them agreed that non-smoking ban made dining environment more comfortahle and was advantageous and necessary for health of the service staffs and customers in the restaurant. The awareness rate of smoking control regulations in service staft~ was 52. 4%. 21.2% of complete non-smoking restaurants and 13.3% of common restaurant thought there was no difficult in carrying out the smoking control regulations. After reading the current smoking control regulations, 81.7% of them showed support attitude. Conclusion Restaurant service staffs supported smoking control in restaurants, but they had limited knowledge on the current smoking control regulations. Related departments should propaganda the specific harms of smoking and regulations among restaurant service staffs, make the regulations more maneuverable and guide the implementation to achieve complete non-smoking in restaurants.
