摘    要:目的研究工业区内的食品安全特点及其影响因素。方法通过对江苏省周市镇工业区5年间食物中毒、日常监督和投诉等资料进行分析,了解工业区内的食品安全特点及其影响因素。结果食品从业人员的个人素质是影响食品卫生安全的最主要因素。结论要把集体食堂为日常监管工作的重点,加强对从业人员的卫生知识培训和企业员工的食品安全知识宣教,按食品量化分级管理的思路,运用HACCP方法,以降低食品安全风险。

Abstract: Objective] To learn food safety features and its impact factors in Industrial areas. Methods] Analyze the 5 years'data of food poison, Daily Supervision and complaint in Zhoushi town industrial areas of Jiangsu province, to learn food safety features and its impact factors. Results] The most important factors affecting food safety were the personal qualities of food Industrial employees. Conclusion ] Collective canteens should be taken as the key point of daily surveillance. Hygiene knowledge training, propaganda and education of food safety among food Industrial employees should be strengthened. Food safety risks should be reduced by using HACCP method, according to food quantitative classification management ideas.
