摘    要:目的 了解四川居民的膳食结构。为制订营养规划提供参考。方法 抽样方法为分层整群抽样法。住户调查为称重三日记帐法,个体调查为24h询问加登记法,与住户调查同时进行。结果 居民食物消费发生了较大变化。日常饮用水中纯净水,瓶装水的比例上升。蔬菜消费提升到第二位,种类明显增多;调味品消费较高(排第五位);肉类消费量有所上升;谷类消费中仍以大米为主,但是豆类,乳类、蛋类,水产品消费较少。结论 我们应增加奶,蛋,水产品的消费,多吃蔬菜与薯类。少饮酒,少吃腌腊食品,改善人群膳食结构。促进人民身体健康。

Abstract:Objective To study the dietary construction of Sichuan residents, and to provide reference to work out nutrition program. Methods A stratified multi-stage cluster random sampling method was used.The dietary survey was done by combining weighing and recording methods to collect household food consumption data for 3 days.At the same time,food intake data of individual members of the household is collected using the "24 hour recall"method for 3 consecutive days. Results The people's food consumption was changed in diet surveys in Neijiang,Mingshan,Wenjiang counties for 90 families.It was increased in drinking water daily for cleaning water and bottle water;vegetable consumption ranked second and the sort of vegetable increased obviously;it was higher on the condiment consumption(ranked 5th);meat consumption raised more and more;rice consumption is most in those people taking grain.But it was less on bean,milk,egg and fish.Conclusions It is important to increase milk,egg,and fish consumption.And we should take more vegetable and less wine,to improve dietary construction and to promote the health.
