摘    要:目的 了解南京市鼓楼区食品的病原微生物检验状况,为今后开展监督监测提供科学依据。方法 2013 - 2015年期间随机抽取南京市鼓楼区390家餐饮店,对抽样食品进行卫生微生物学检测。结果 共检验食品1 672份,卫生微生物检验合格1 554份,合格率为92.94%;3年合格率(86.89%、93.92%和98.34%),呈逐年上升,差异有统计学意义(χ2 = 69.565,P<0.001)。不同种类食品中卫生微生物检验合格率最高的是饮料类(98.21%),熟肉制品类为最低(90.56%)。不合格食品中致食品不合格的主要原因是大肠菌群超标,占所检样品总数的17.20%、占不合格样品总数的94.92%。结论 南京市鼓楼区各类抽样食品卫生微生物检验总体合格率较高,但熟肉制品合格率偏低。应加大卫生监督监测力度,加强食品企业从业人员卫生知识培训,确保食品卫生安全。

Abstract:Objective This study was to understand the status of food-borne pathogenic microorganisms in Gulou District of Nanjing city, so to provide scientific basis for food safety supervision and monitoring in the future. Methods During 2013-2015, 390 food and beverage outlets in Gulou District of Nanjing city were randomly selected to draw food samples for microbiological inspection. Results A total of 1672 food samples were tested. Hygienic microbiological examination qualified 1554 copies, with a pass rate of 92.94%. The pass rate in the past three years was 86.89%, 93.92% and 98.34%, respectively, presenting an increasing trend, with statistically significant difference(χ2 = 69.565, P<0.001). Among different kinds of food, beverage had the highest passing rate of 98.21%. Cooked meat products in contrast had the lowest of 90.56%. The standard-breaking counts of coliform bacteria was the main reason of unqualified food products, accounting for 17.20% of the total samples and for 94.92% of the total number of unqualified samples. Conclusion The samples for food-borne pathogenic microbiological examination in Gulou District of Nanjing city had an overall high pass rate, but the pass rate of cooked meat products was low. Health supervision should be strengthened, and staff in food business should be further trained on health knowledge to ensure food safety.
