2015年绵阳市309份食品中食源性致病菌监测结果分析

摘    要:目的 了解绵阳市食品中食源性致病菌的污染现状,预防食源性疾病事件发生,为食品安全监管和科学评估食品安全风险提供数据。方法 2015年在绵阳市采集6类309份食品,按照国家风险监测手册进行6种食源性致病菌检测。结果 6类309份样品中共分离出4种8株食源性致病菌,总检出率2.59%,检出致病菌的食品是凉面/凉粉、生冻海产品和三明治,检出致病菌有蜡样芽胞杆菌、金黄色葡萄球菌、副溶血性弧菌和单增李斯特菌。其中街头摊点(凉粉/凉面)致病菌检出率最高,为19.05%,蜡样芽胞杆菌检出率最高,为8.82%,散装食品致病菌检出率为3.33%。结论 2015年绵阳市309份食品中致病菌总体检出率不高,街头摊点的凉粉/凉面应作为重点监管食品,蜡样芽胞杆菌、金黄色葡萄球菌、副溶血性弧菌和单增李斯特菌应作为重点监测致病菌,重视散装食品的监督管理。

Abstract:Objective This study was to understand the status of food borne pathogens contamination in Mianyang, prevent food borne disease and provide data for the supervision and assessment of food safety risks. Methods 6 types of food samples were collected. According to the national standard method and the national food borne disease monitoring manual,six categories of food borne pathogens were isolated and identified. Results 8 strains of food borne pathogens of 4 types were isolated from 309 samples, with a positive rate of 2.59%. The pathogens detected in cold noodles, jelly, frozen seafood and sandwich were Bacillus cereus, Staphylococcus aureus, Vibrio parahaemolyticus and Listeria monocytogenes. The pathogen detection rate was the highest (19.05%) in street food such as jelly and cold noodles. Among the pathogens, the detection rate of Bacillus cereus was the highest (8.82%). The pathogen detection rate in bulk food was 3.33%. Conclusion The pathogen detection rate was not high in Mianyang. Surveillance should focus on jelly and cold noodles in street food. Special attention should be paid to B. cereus, S. aureus, V. parahaemolyticus and L. monocytogenes. Supervision and management of food in bulk should still be strengthened.
