摘    要:目的 了解郑州市凉粉类淀粉制品中微生物污染状况,为预防食源性疾病提供依据。 方法 根据GB 4789.2-2010、GB 4789.3-2010、GB 4789.4-2010以及GB 4789.10-2010对凉粉类淀粉制品中菌落总数、大肠菌群、沙门氏菌以及金黄色葡萄球菌分别进行检测。 结果 按照GB 2713-2003《淀粉制品卫生标准》要求判断,260份样品菌落总数合格率为23.08%,大肠菌群检出率为75.00%;样品间菌落总数存在差异(P<0.01),大肠菌群含量差异也较大。沙门氏菌检出率为11.54%,金黄色葡萄球菌检出率为3.85%。 结论 郑州市凉粉类淀粉制品微生物污染问题较为普遍,应加强对该类食品的监管,以改善该类食品的卫生状况。

Abstract:Objective The microbial contamination in the bean jelly starch products were investigated in Zhengzhou,Henan province,in order to provide the scientific basis for preventing foodborne disease. Methods The total number of a bacterial colony,coliform group,Salmonella,and Staphylococcus aureus were determined according to the GB 4789.2-2010,GB 4789.3-2010,GB 4789.4-2010 and GB 4789.10-2010,respectively. Results According to GB 2713-2003 Hygienic Standard for Starch Products,the qualification rate of a total number of the bacterial colony was 23.08%.The Enumeration of coliforms detection rate was 75.00%.The total number of the bacterial colony were different in 260 samples (P<0.01),whereas the coliform group was also quite different.Salmonella detection rate was 11.54%.The detection rate of Staphylococcus aureus was 3.85%. Conclusion The microbial contamination problems of the bean jelly starch products are very common in Zhengzhou.It is quite important to strengthen the regulation of this kind of food to ensure consumer′s safety.
