茉莉花叶色素的提取及其理化性质研究

摘    要:目的:为了生产各种食用品、化妆品、医学药品等色素新产品提供重要原料,充分利用茉莉花叶资源,研究茉莉花叶色素的提取最佳条件和理化性质。方法:采用蒸馏水提取法从茉莉花叶中提取色素,用紫外分析法研究所提取色素的稳定性。结果:色素在330nm处有最大吸收峰,水溶性良好。结论:pH值对此色素的稳定性有明显影响,在25~60℃热稳定性良好,但色素耐氧化剂、还原剂较差。苯甲酸钠、柠檬酸按、醋酸、蔗糖、葡萄糖食品添加剂对茉莉花叶色素的稳定性无明显影响,但在淀粉存在下,对色素的稳定性有明显影响。在9种金属离子中,Fe3+,Cu2+使该色素变色,且Fe3+对色素有破坏作用。在Mn2+存在的情况下,色素稳定性差,其他金属离子对色素几乎无影响。
