摘    要:[目的]分析厦门市岛内具有一定规模餐饮单位的食(饮)具消毒状况,便于卫生监督和干预。[方法]2010~2011年在厦门岛内选择一定规模的酒店116家、酒楼78家及西餐厅38家,对其食(饮)具检测大肠菌群。[结果]2010-2011年合计检测232家餐饮单位,4590份食(饮)具,大肠菌群阳性的984份,阳性率为21.44%。酒店(中餐厅)阳性率为20.39%、酒楼为27.87%、西餐厅为11.71%,差异有统计学意义(P〈0.01)。[结论]厦门岛内的具有一定规模的单位食(饮)具消毒状况以西餐厅(含酒店中的)最好,酒店中餐厅次之,酒楼中餐厅最差。卫生监督和干预的重点应是中餐厅。

Abstract:[Objective]To analyze the disinfection status of tableware in some certain restaurants of Xiamen for health supervision and intervention. [Methods]The tableware of 116 certain taverns,78 boites and 38 western-style restaurants were selected in Xiamen city during 2010 and 2011, for analyzing the situation of the detection of Coliform groups. [Re- sults]A total of 232 catering unites were detcted. There were 4 590 tableware and 984 were coliform positive. The positive rate was 21.44%. The total detection rate in taverns(Chinese restaurants)was 20.39%, in boites was 27.87% and in Western-style restaurants was 11.71%. Through the statistical process, the total detection rate was significantly sup- pressed ( P 〈0. 05) among the groups. [Conclusion]The disinfection status in the western-style restaurants is the best,in the taverns is better and in the boites is the worst in the catering services of Xiamen. Therefore, the Chinese restaurants are the most important sections for health supervision and intervention.
