摘    要:HACCP体系作为一种最经济、最有效的食品卫生监督管理先进技术,早已被国外发达国家食品卫生监督部门大力推广,我国也开始探索将其引入国内食品卫生监督管理。本文着眼于目前国内外HACCP技术应用研究,从食品生产企业、餐饮业,重大活动保障三大方面进行了综述。

Abstract:As the most economical and effective technique of food hygiene supervision,HACCP system has been popularized abroad for many years,and began to be introduced into China.Based on the application of HACCP at home and abroad,conditions of food production enterprise,restaurant business and surveillance during important activities are reviewed.
