| 摘 要： | HACCP体系作为一种最经济、最有效的食品卫生监督管理先进技术，早已被国外发达国家食品卫生监督部门大力推广，我国也开始探索将其引入国内食品卫生监督管理。本文着眼于目前国内外HACCP技术应用研究，从食品生产企业、餐饮业，重大活动保障三大方面进行了综述。
