69家路边饭店食(饮)具消毒现状及对策

摘    要:通过对69家路边饭店的食(饮)具消毒现状调查,多数饭店卫生管理制度不落实,有89.5%的饮食从业人员不懂食(饮)具洗刷、消毒、保洁等卫生知识,在同一水池内洗肉、洗鱼、洗菜后再洗刷食(饮)具,交叉污染严重,且保洁措施不全,食(饮)具卫生细菌学检测,总合格率仅占40.99%,提示应加强路边饭店的食(饮)具消毒卫生管理工作
