2010年江西省食品中重金属污染现状及分析

摘    要:目的:对江西省本地食品中重金属污染物进行监测,并对监测结果进行评价。方法:对粮食、蔬菜、水产品、肉类等8类食品1239份样品进行了铅镉汞的监测,对122份面制品进行铝的含量监测。结果:2010年江西省本地食品中铅、镉、汞、铝的合格率分别为95.9%、98.5%、99.5%和75.4%。食用菌中镉和汞污染较为严重,镉超标率为8.3%;部分肾脏样品受到铅和汞的污染,检出汞最大值为0.95 mg/kg;油炸面制品受铝污染最为严重,铝含量平均值为185 mg/kg,超标率达86.7%。结论:要进一步加强重金属污染物的监测力度,加强油条摊位点和食用菌生产企业的监督管理。

Abstract:Objective:To monitor metal contaminants in local foods in Jiangxi Province and carry on an evaluation as a result to the monitoring.Methods:Lead,cadmium and mercury were monitored in 1239 samples from 8 kinds of food including grain,vegetables,aquatic products and meat etc.Aluminum content was tested in 122 flour products.Results:The passing percents of Pb,Cd,Hg,Al were 95.9%,98.5%,99.5% and 75.4% in Jiangxi local foods in 2010.Cadmium and mercury pollution in edible mushroom was comparatively serious,and the cadmium unqualified rate was 8.3%.Some kidney samples were contaminated by lead and mercury,and the maximum of mercury was 0.95 mg/kg.The aluminium pollution in fried flour products was most severe,and the average content was 185 mg/kg,the unqualified rate was 86.7%.Conclusion:It is necessary to further strengthen metal contaminants monitoring,particularly the supervision and management of booths selling fried twisted dough and enterprises manufacturing edible mushroom.
