摘    要:目的了解宜兴市近几年发生亚硝酸盐食物中毒的原因,为预防和监管工作提供依据。方法采用流行病学调查,结合实验室检测结果对3起案件进行分析。结果3起案件分别为食品级亚硝酸盐添加过量引起中毒,腌肉制品中加入过量的亚硝酸盐引发的食物中毒和误食无标识的“盐”引起的亚硝酸盐食物中毒。结论应加强多渠道宣传,提高各类人员对亚硝酸盐中毒的认识,加强市场生产及销售食品添加剂亚硝酸盐的管理,卫生监督部门要加强培训和监督工作,杜绝误食和超量使用引发的食物中毒。

Abstract: Objective] To investigate the reasons for food poisonings caused by nitrite in Yixing city in recent years, and provide evidence for prevention and supervision. Methods ] Epidemiological investigation and laboratory detection were applied to analyze the 3 incidents. Results] The 3 incidents of food poisoning events are caused by edible nitrite overdosed in food , edible nitrite overdosed in brawn, and mis-eating unlabeled "salt". Conclusion ] Propaganda should be strengthened through multiple channels, the people's consciousness of nitrite poisoning should be enhanced, and the administration of the nitrite in production and marketing should be enhanced, health supervising departments should strengthen supervision and training to reduce the occurrence of poisonings caused by mis-eating and over-dose.
