Abstract:The fermentation of Chinese materia medica is a traditional Chinese medicine processing method, which refers to the properties and pharmacological activities of Chinese materia medica can be changed by microorganisms and enzymes under certain circumstances. Based on this, modern fermentation technology is developed with the help of microbial technology. In the process of fermentation, organisms show brilliant biotransformation ability, and can produce a wealth of secondary metabolites, which is more advantageous than general processing methods and has become a hot spot of current research. In this study, we summarized fermentation methods, strains, analysis technologies of fermentation system and effects on chemical constituent, property and flavor, pharmacological activity. This study will be hoped to provide ideas and references for the further development and applications of fermentation technology of Chinese materia medica.
