摘    要:目的 探讨乳制品中两种蛋白质含量测定方法的差异及经验。方法 运用食品中蛋白质含量测定第二法,即分光光度法进行乳制品中蛋白质含量测试.与第一法进行比较并进行样品精密度和回收率测试。结果 二种方法的结果相差不大,但存在一定误差。结论 第二法较第一法进行批量样品测试较为简便、效率高,且样品回收率高,平行实验标准偏差小.适合推广运用。

Abstract:Objective To explore the differences between the two determination methods for the contents of the protein in the milk product. Methods The second determination method of the contents of the protein in the food was employed that was spectrophotometric method to the test of the milk product. Comparison of the two methods was performed and to carry out the precision and the recovery rate experiment of the samples. Results The two methods had no significant difference from each other but had a certain error.Conclusion The second method was convenient to determine large quantities of samples, the efficiency of which was so high and the standard deviation was so small that the method is fit to be applied.
