佛山市高明区食源性沙门菌的分布特点及其流行情况

摘    要:目的了解佛山市高明区辖区范围内食源性沙门菌在食品中的分布情况及其流行特点。方法按不同季节对辖区内三镇一街的各大农贸市场的动物性食品和植物性食品随机抽样,按GB/T 4789.4-2010对样本进行沙门菌的分离和鉴定,得出的结果按不同食品、不同季节及不同地域进行卡方检验,P<0.05为差异有统计学意义,以统计软件SPSS 19.0作分类统计比较。结果 5类食品中,以生肉中沙门菌的检出率(14.05%)高于其他食品(3.61%),差异有统计学意义(χ2=30.77,P<0.05);辖区内更合镇农贸市场所抽取食品沙门菌检出率(12.87%)高于其他镇街市场所销售的食品(6.73%),差异有统计学意义(χ2=6.45,P<0.05);夏秋季食品中沙门菌检出率(11.30%)高于冬春季(6.29%),差异有统计学意义(χ2=4.72,P<0.05),符合其季节性流行特征。结论沙门菌分布广泛,且检出率较高,应引起重视,为了掌握其动态的流行及分布特征,建议建立沙门菌长期、持续的监测体系。

Abstract:Objective To understand the distributing situation and the epidemic features of food-born Salmonella in Gaoming district.Methods Different kinds of animal and vegetarian food samples were taken randomly from retailers in the food markets during different seasons to isolate and identify Salmonella according to GB/T 4789.4-2008 guideline.Results Among 5 kinds of food samples,the positive rate of Salmonella(14.05%) in raw meat was much higher than that in other food idioms(3.61%)(χ2=30.77,P<0.05).Meanwhile food samples taken from Genghe town were more likely to be contaminated by Salmonella with the highest positive rate of 12.87% compared to foods from other towns(6.29%)(χ2=6.45,P<0.05).Also the positive rate of food samples taken during summer and autumn(11.30%) was almost doubled the number of that during winter and spring(6.29%)(χ2=4.72,P<0.05) which represented the seasonal epidemic feature of Salmonella.Conclusions Salmonella contamination is still common in food and a sustainable monitoring system should be set up in order to monitor the epidemic situation dynamically.
