新疆库尔勒地区轮台县维吾尔族居民膳食调查分析

摘    要:目的了解新疆库尔勒地区轮台县维吾尔族的膳食结构及营养素摄入水平,以便指导维吾尔族营养保健,改善和提高维吾尔族的营养状况,为在少数民族地区进行营养学的宣传教育指导以及预防各种疾病,提供科学依据。方法以新疆库尔勒地区轮台县维吾尔族为调查对象,采用问卷调查法对192名研究对象进行基本情况调查,采用24h回顾法进行膳食营养状况调查。结果热量、蛋白质、大部分维生素及矿物质都已达到甚至超过DRIs标准,维生素A、核黄素、钙和锌摄入不足,达不到DRIs标准的要求,动物性脂肪有摄入过多的趋势。结论维生素A、核黄素、钙和锌为当地维吾尔族缺乏的营养素。建议在当地维吾尔族中开展宣传工作,加强对维吾尔族的营养指导,注意补充维吾尔族易缺乏的营养素,降低维吾尔族居民的动物脂肪摄入量。

Abstract:Objective To explore the dietary structure and nutrition status of the Uigur people in Luntai Xinjiang,instruct the Uigur national minority in nutrition health care,and improve and enhance the nutrition condition of the Uigur national minority.Methods With the Uigur national minority as the investigation object in Luntai County of Korla District of Xinjiang,the questionnaires were used to carry out the basic situation investigation for the research object,and 24 hours review method was adopted to conduct the dietary nutrition condition investigation.Results Calorie,protein,the majority of vitamins and the mineral had all achieved and even surpassed the DRIs standard,but the intake of vitamin A,riboflavin,calcium and zinc were deficient and could not achieve the requirement of DRIs standard.Besides,animal fat had been intaken excessively.Conclusions The vitamin A,riboflavin,calcium and zinc are the needed nutrients for the local Uigur national minority.Our suggestion is to carry out the publicizing work in the local Uigur national minority,strengthen the Uigur national minority's nutrition instruction,supplement the Uigur national minority's needed nutrients,and reduce the Uigur national minority inhabitant's animal fat intake.
