摘    要:目的 了解2012年上海市普陀区生鲜食品中食源性致病菌的污染情况,提高对食源性疾病的有效控制及其早期预警能力.方法 按照《食品微生物学检验》(GB4789-2010)和GFN项目的相关检验要求对5种食源性致病菌进行检测.结果 2012年采集的5类共210份生鲜食品中生禽肉、生猪肉、生牛肉为主要受污染食品,检出率分别为71.43%、64.29%和61.90%;水产品和新鲜鸡蛋中检出率分别为46.43%和 21.43%.5种食源性致病菌的总检出率为61.43%,其中沙门菌检出率为29.52%,副溶血性弧菌检出率为3.81%,金黄色葡萄球菌检出率为10.95%,单核细胞增生李斯特菌检出率为33.81%,小肠结肠炎耶尔森菌检出率为9.52%.结论 上海市普陀区超市生鲜食品中存在较为严重的食源性致病菌污染,主要来源于生禽、猪、牛肉,提示应加强对生鲜食品卫生的监管力度,防止食源性疾病的暴发.

Abstract:Objective To investigate the contamination of food-borne pathogens in fresh food in Putuo dis- trict of Shanghai, and to improve capabilities for controlling and early warning of food-borne disease. Methods Five kinds of food-borne pathogens were detected according to the Food microbiological examination (GB4789-2010) and the requirement of Project GFN. Results A total of 210 samples were collected from 5 sorts of fresh food in 2012, and the pathogens detection rates of contamination involved predominately were 71.43%, 64.29% and 61.90% in raw poultry, meat and beef. The pathogens detection rates of contamination were 46.43% and 21.43% in aquatic product and eggs. Five kinds of pathogens were found in 129 pieces of food samples (61.43%). A total of 184 strains of food-borne pathogens were isolated, including 62 strains of Salmonella (29.52%), 8 strains of Vibrio parahaemolyticu~ (3.81%), 23 strains of Staphylococcus aureu~ (10.95%), 71 strains ofListeria monocytogenes (33.81%), 20 strains of Yer- sinia pseudotuberculosis (9.51%). Conclusion The situation of fresh food contamination with food-borne pathogens is serious in the super market of Putuo district, Shanghai. It is necessary to strengthen supervision on fresh food in order to prevent the outbreak of food-borne disease
