摘    要:[目的]建立炒神曲中短链脂肪酸的顶空气相色谱-质谱联用分析方法(HS-GC/MS)。[方法]采用HS-GC/MS分析炒神曲中短链脂肪酸。炒神曲样品密封于顶空进样瓶中进样分析。[结果]通过检索美国国家标准与技术研究院(NIST)标准质谱库,鉴定了7种短链脂肪酸:乙酸、丙酸、异丁酸、丁酸、异戊酸、戊酸、己酸。[结论]该方法能够快速分析炒神曲中短链脂肪酸,为炒神曲的质量控制研究奠定基础。

Abstract:[Objective] To establish a headspace gas chromatography mass spectrometry method for analysis of short-chain fatty acids (SCFAs) of fried medicated leaven. [Methods] Headspace gas chromatography mass spectrometry (HS-GC/MS) was applied for this study. Fried medicated leaven samples were sealed in the headspace bottle for analysis. [Results] By retrieving the National Institute of Standards and Technology (NIST) library, seven SCFAs was identified, including acetic acid, propionic acid, isobutyric acid, butyric acid, isovaleric acid, valeric acid and caproic acid. [Conclusion] The method could be used for rapid analysis of SCFAs of fried medicated leaven, which could establish the foundation for quality control of fried medicated leaven.
