安康市2011—2012年食源性致病菌污染现状

摘    要:目的了解安康市食品中微生物污染状况及分布,为有效预防食源性疾病提供科学依据,以保障本市居民饮食安全。方法在全国食品污染物监测网与食源性疾病监测网控制体系下,2011—2012年共采集6大类444个样品,对金黄色葡萄球菌、单核细胞增生李斯特菌(以下简称单增李斯特菌)、沙门菌、阪崎肠杆菌、0157:H7出血性大肠埃希菌等进行监测与分析。结果444份食品样品中,分离出致病菌46株,总检出率10.36%。其中金黄色葡萄球菌27株(6.08%);阪崎肠杆菌3株(5.77%);单增李斯特菌15株(4.36%);沙门菌1株(0.24%);0157:H7未检出。6大类食品中致病性阳性率最高的是凉皮(30.00%),其次为凉拌菜(11.11%)和糕点及饼干(7.95%),熟肉制品、婴幼儿食品均有不同程度的污染。结论金黄色葡萄球菌和单增李斯特菌在本市市售食品中广泛存在,应有针对性的防范和控制各类食品致病菌的污染。

Status of food- borne pathogen contamination in Ankang city from 2011 to 2012

Abstract:Objective To investigate the contamination of food - borne pathogens and distribution in food of Ankang to pro- vide scientific basis for effective prevention of food - boIne illness and ensure residents' food safety of Ankang city. Meth- ods Based on the national food contaminant monitoring network and food - borne diseases monitoring system, 444 samples of six kinds were collected from 2011 to 2012. The simples were tested for Staphylococcus aureus , Listeria monocytogenes, Salmonella,Sakazakii, Escherichia coli O157:H7. Results Forty - six bacterial strains were isolated from 444 samples, and the detection rate was 10. 36%, including 27 strains Staphylococcus aureus (6. 08% ) ;3 strains sakazakii (5.77%) ; 15 strains Listeria monocytogenes (4. 36% ) ; 1 strain Salmonella (0. 24% ) ; Escherichia coli O157:H7 was not detected. Among the six categories of food, pathogenic cold noodle had the highest positive rate ( 30.00% ), followed by salad (11.11%), cakes and biscuits (7. 95% ). Cooked meat products, infant foods had different levels of pollu- tion. Conclusion Staphylococcus aureus and Listeria monocytogenes which are commercially available food in the city exist widely. All kinds of food pathogens pollution should be targeted for prevention and control.
