南京高校大学生膳食丙烯酰胺知晓度与暴露水平

摘    要:目的了解南京市高校大学生对食品中丙烯酰胺的知晓度以及大学生人群膳食丙烯酰胺暴露水平,为开展相关食品安全知识的宣传教育提供依据。方法采用24 h膳食回顾法,对随机整群抽取的南京市5所高校的1 000名学生进行连续3 d的膳食调查;并运用自行设计的问卷调查研究对象的膳食丙烯酰胺知晓度。结果 65.3%的学生从未听说过丙烯酰胺,仅有5.1%的学生知晓其危害;膳食丙烯酰胺的平均暴露量为每日1.50μg/kg,46.2%的受访者暴露量高于世界卫生组织和国际粮农组织所给出的人均膳食丙烯酰胺暴露估计量(每日0.8μg/kg)。结论南京高校大学生人群对膳食中丙烯酰胺的知晓率较低,而人群暴露量却很高,应加强相关食品安全知识的宣传力度。

Investigation of the awareness and exposure level of dietary acrylamide in the college students in Nanjing

Abstract:Objective To study and analyze the awareness and exposure levels of the dietary acrylamide among the college students of Nanjing,as to promote the education of food safety.Methods Randomly selected five universities in Nanjing,from which 1 000 students were investigated,using self-designed questionnaire interview survey.Results More than 65.3% of the investigated students had never known about the acrylamide.Only 5.1% students knew about its hazard.The average level of the dietary acrylamide exposure in investigated students was 1.50 μg/kg per day).Compared with the value,0.8 μg/kg per day,of which was estimated by WHO and FAO,46.2% of college students’ dietary acrylamide exposure level was much higher.Conclusion The awareness of dietary acrylamide is low,while exposure level is high.The result suggests that the necessary propaganda of the relevant food safety knowledge should be given.
