微波杀菌机理研究:微波照射与水浴加热杀菌效果的比较

摘    要:微波照射与水浴加热对白色葡萄球菌与枯草杆菌黑色变种芽胞悬液在作用相同时间升高到相同温度条件下,杀灭率差别显著。此试验结果表明,微波杀菌除热效应外,当还有非热效应。

Abstract:In order to know the significance of heat and non-heat effects in germicidal mechanism of microwave, experiment with Staphylococcus albus and spores of Bacillus subtilis var. niger was carried out in laboratory. The results indicated that microwave irradiation for 50 s at 62掳C could kill 100% of S. albus, while water-bath heating could attain the same killing rate only by heating to 66℃ for 180 s or 100℃ for 50 s. Similarly, microwave irradiation for 150 s (70℃ ) could kill 99.9% of spores of B. subtilis var. niger, while water-bath heating to 72 ℃ for 300s could kill less than 30% and 100℃ for 150s could only kill 73%. The above results suggest that the germicidal action of microwave is the result of combination of heat and non-heat effects.
