烹调烟雾对人体免疫功能的影响

摘    要:目的 通过对烹调烟雾职业暴露人群外周血免疫指标的测定了解烹调烟雾对机体免疫功能的影响。方法 对被试者 70人 ,其中暴露组 41人 ,对照组 2 9人。分别通过流式细胞仪直接荧光法、四甲基偶氮唑盐 (MTT)比色法、放射免疫分析法、生物素 -亲和素双抗体夹心酶联免疫吸附 (ABC- EL ISA)技术分析人外周血 T、B淋巴细胞及亚群、自然杀伤细胞 (NK细胞 )活性、白细胞介素 - 2 (IL- 2 )、γ-干扰素 (IFN- γ)水平。结果 经成组 t检验 ,暴露组 CD3+细胞百分率、NK细胞杀伤率明显低于对照组 (P<0 .0 1) ,工龄 7年以上被调查者中暴露组 CD4+ CD8- T细胞百分率、CD4+ / CD8+细胞比值明显低于对照组 (P<0 .0 5 ) ;而 CD8+ CD4- T、CD19+细胞百分率、IL- 2、IFN- γ水平两组间差异无统计学意义 (P>0 .0 5 )。结论 长期接触烹调烟雾对机体细胞免疫功能有一定抑制作用

Abstract:Objective To understand the effects of cooking oil fumes (COF) on the immune function,the determination of immunological indexes for cell-mediated immunoreaction in peripheral blood of population occupationally exposed to COF was carried out.Methods The peripheral blood samples were collected from 70 individuals,among which 41 persons occupationally exposed to COF,for the following determinations:the subtypes of T and B lymphocyte were analyzed by immunofluorescence assay using fluorescence activated cell sorter.NK cell activities were measured by MTT reduction assay.The levels of serum IL-2 were determined by radioimmunoassay.The levels of IFN-γin serum were determined by ABC-ELISA kit.Results The obtained data were analyzed by grouped t-test.The percentage of CD3+ T lymphocyte and the activities of NK cell in exposure group were lower than those in control group (P<0.01).The percentage of CD4+CD8-T lymphocyte and the ratio of CD4+ to CD8+ lymphocyte of individuals in exposure group with exposure history of not less than 7 years were significantly lower than those of controls (P<0.05).The percentages of CD8+CD4-T lymphocyte and CD19+ cells,the levels of IL-2 and IFN-γ in serum showed no significant differences between the two groups(P>0.05).Conclusion Long-term exposure to COF might inhibit the cell-mediated immune function in a certain degree.
