摘    要:目的了解张家港市食品污染现状,为相关食品的监管提供依据。方法在覆盖全市的食品污染物监测网点内抽检各类食品,开展微生物、重金属及有害元素、真菌毒素、食品添加剂和非法添加物等项目的检测。结果共抽检28类食品2 829份,合格2 659份,总合格率为93.99%;主要不合格食品为非发酵豆制品、粉丝粉条、鱼糜制品、蛋及蛋制品、畜类内脏、食用菌、面制食品、水发食品和酱腌制蔬菜等,合格率均低于95%,其中非发酵豆制品和粉丝粉条合格率最低,分别为5.88%和39.89%;主要不合格项目是细菌总数、大肠菌群、铅、汞、含铝添加剂(以铝计)、甜蜜素、亚硝酸盐和吊白块等。结论张家港市食品污染总体水平较低,但非发酵豆制品的微生物污染,畜类内脏、蔬菜等食品的重金属污染,部分添加剂和违法使用物质的超范围或超量使用等现象需引起重视,应加强相关领域的监管力度并开展针对性的宣教培训。

Abstract:Objective To investigate the current status of food contamination in Zhangjiagang and provide basis for the hygienic supervision. Methods Different kinds of food were sampled from the citywide monitoring spots of "Food Contamination Monitoring System" to detect the items of microorganism, heavy metals and harmful elements, mycotoxins,food additives and the illegal additives. Results 2829 food samples of 28 kinds were collected and 2659 samples were qualified with qualification rate 93.99%. The food which got a qualification rate lower than 95% include non-fermented soy products, vermicelli, minced fish products, eggs and egg products, animal innards, edible fungus, wheat flour food,water-swollen food and sauce pickled vegetables. The non-fermented soy products and vermicelli got lowest qualified rate5.88% and 39.89%. Main unqualified itesm were the CFU of bacteria, coliform group, Lead, Mercury, Aluminum,cyclamate, Nitrite and Rongalit, etc. Conclusion The overall food contamination level in Zhangjiagang is low. We should pay more attention to microbial contamination in not-fermented soy products, the heavy metal pollution in animal offals and vegetables, the excessive use of some food additives and some illegal material. It is suggested to reinforce the supervision in the related fields and to carry out targeted propaganda and training.
