摘    要:目的寻找浓缩椰子浆产品胖听腐败变质的原因。方法产品按乳化程度好坏分为实验组和对照组,按国标商业无菌GB/T4789.26-2003检验分析。结果对照组各批次均未出现胖听腐败现象,商业无菌检验合格;实验组各批次均出现胖听腐败或细菌大量增殖,商业无菌检验不合格。结论浓缩椰子浆产品出现胖听腐败变质的原因是产品乳化程度不好、油水分层,致使细菌在罐内大量繁殖造成的。

Abstract:Objective To study the cause of rot of concentrated coconut juice. Methods The coconut juice samples were assigned into the experiment group and control group according to their emulsified degrees and examined according to GB/T4789.26-2003. Result Samples in the experiment group occurred rot with massive bacterial contamination, and samples in the control group did not occur any rot. Conclusion The reasons of rot of concentrated coconut juice are due to bad emulsification and oil water dissociation resulted in massive bacterial replication.
