Principle and Application of Microbiological Risk Analysis of Foods

Hazard of food borne microbial pathogens is a major growing public health problem. The microbiological risk analysis of food plays an important role in international trade by ensuring that countries establish food safety requirements that are scientifically sound and by providing a means for determining equivalent levels of public health protection between countries. The microbiological risk analysis of food is composed of the three elements: risk assessment, risk management and risk communication. The microbiological risk analysis of food framework provides a structured and scientific approach to evaluating the complex issues associated with food hygiene and food borne diseases. The principle and application of the microbiological risk analysis of food were discussed in this paper.
