食品微生物危险性分析的原则与应用

摘    要:来自食品微生物危害的危险与人类健康密切相关。而危险分析是确保以完善的科学知识建立起有关食品安全的标准、指南和提出建议,来加强对消费者的保护,为国际贸易创造便利的一个重要手段。以保护公众健康为总体目标的微生物危险性分析包括三部分:危险评估、危险管理和危险信息交流。食品微生物危险性分析过程应该尽最大可能地收集所有能收集到的信息资料,并通过运用危险性分析的基本原则进行推广应用。本文对食品微生物危险性分析的原则和应用讨论。

Abstract:Hazard of food borne microbial pathogens is a major growing public health problem. The microbiological risk analysis of food plays an important role in international trade by ensuring that countries establish food safety requirements that are scientifically sound and by providing a means for determining equivalent levels of public health protection between countries. The microbiological risk analysis of food is composed of the three elements: risk assessment, risk management and risk communication. The microbiological risk analysis of food framework provides a structured and scientific approach to evaluating the complex issues associated with food hygiene and food borne diseases. The principle and application of the microbiological risk analysis of food were discussed in this paper.
